Savory Waffle-wich

Ingredients:
  • 2 frozen whole grain waffles
  • Mustard
  • Reduced sodium turkey slices
  • Cheddar cheese slices
  • Apple slices
Directions:
  • Toast waffles. Spread desired amount of mustard on both waffles. Place desired number of turkey slices, cheddar cheese, and apple slices on top of mustard. Place one waffle (mustard side down) on top of the other waffle (mustard, turkey, cheese, and apple side up) and enjoy it like a sandwich!

Sweet Waffle-wich

Ingredients:
  • 2 frozen whole grain waffles
  • Almond butter
  • Fresh seasonal fruit (such as bananas, strawberries and blueberries)
Directions:
  • Toast waffles. Spread desired amount of almond butter on both waffles. Slice the fruit (if need be) and place on top of almond butter. Place one waffle (almond butter side down) on top of the other waffle (almond butter and fruit side up) and enjoy it like a sandwich!

Chai Tea Latte

Ingredients:
  • 1 cup almond milk
  • ½ tsp. vanilla
  • 1 tsp. cinnamon
  • 1 chai tea bag
Directions:
  • Combine almond milk, vanilla, and cinnamon in a microwave-safe mug. Microwave for 2 minutes and place the chai tea bag in the mug. Enjoy!

Baked Apples

Ingredients:
  • Your favorite apple, washed and cored (recommended: Cortland)
  • Brown sugar
  • Cinnamon
  • Butter or margarine
Directions
  • Poke holes in the skin of the apple to allow for the steam to escape while cooking. Place the apple in a microwave-safe bowl. Sprinkle around and inside the apple with a few teaspoons of brown sugar and a pinch of cinnamon. Top the apple with a small sliver of butter or margarine. Cover the bowl with plastic wrap and microwave for 2 minutes.

Breakfast Cereal Bar

Ingredients:
  • Cooking spray
  • 4 Tbsp. peanut butter
  • 1 Tbsp. butter or margarine
  • 2 cups mini marshmallows
  • 1 cup granola
  • 1 cup puffed rice cereal
Directions
  • Lightly coat a baking dish with cooking spray.
  • Add peanut butter, butter or margarine, and mini marshmallows to a medium-sized bowl. Microwave for 30 to 45 seconds. Mix until smooth. Add granola and rice cereal. Mix until well combined. Pour into the greased baking dish.
  • Use wax paper or foil to push the mixture down into the dish to make it even. Cut into pieces and enjoy.

My favorite quick and hot breakfast is Banana Oats Bake. Mix a mashed banana, 3 Tbsp. oats, 1 tsp. brown sugar (optional), and a sprinkle of cinnamon. Mash into the bottom of a bowl sprayed with cooking spray. Microwave for 90 seconds. Let sit 30 seconds and then invert or eat from bowl. You can top it with peanut butter for added protein.

Take 1/2 cup of quinoa, 1 cup of water, some diced apples, and some cinnamon and sugar. Microwave quinoa in water until it boils. When water is absorbed add in the other ingredients.

I like to make cheesy eggs. Take a couple of eggs, slice and dice American or other cheese and mix together in a bowl. Microwave until eggs are done and cheese is melted.

I take 1/2 cup of raw organic oatmeal, 1 cup of water, and 1/2 cup frozen organic or homegrown blueberries, raspberries, or any berries you like. Microwave until done in 30-second intervals.

Scrambled Egg Wraps

Ingredients
  • 3 eggs
  • 1/4 c. milk
  • 3 mint leaves
  • 1/2 of a diced tomato
  • Salt and pepper
  • 1 tsp. butter
  • Tortillas
Directions
  • Beat the eggs and butter in a bowl. Mix the tomato and milk, add in the mint, and then add the salt and pepper. Combine with egg mixture. Pour into plastic container and microwave on high for 30 seconds. Mix and heat again for 30 seconds continuing until the mixture hardens. Warm the buttered tortillas for 15 seconds in a microwave then add on your favorite condiment—mine's mayonnaise. Add the egg mixture to the tortillas. Roll up and serve with cold iced tea or juice.

Take some precooked diced ham, sold in stores, and throw it in a bowl. Throw in some shredded cheese with some chopped up spinach. You’ll need a microwave omelet maker. Crack open three eggs and agitate with a fork. Pour the eggs in both halves of the omelet maker. Microwave on high for one minute and 30 seconds. Remove omelet maker and add the ingredients from the bowl into both halves of the omelet maker. Put back in microwave for another minute on high. Now close the lid on the omelet maker and cook for another 30 seconds. Once complete, slide omelet out of maker onto plate. Add your toppings (in my case, salsa and sour cream) and enjoy. If you’re in a real hurry, toast up two pieces of Texas toast and make it an omelet sandwich to go.

I love making eggs in the microwave. I crack a couple eggs in a microwave safe dish (use egg whites if you'd like), add a tablespoon of water, whisk with a fork, and microwave for 1.5-2 minutes.

Boil almond milk in the microwave. Pour over a bowl of old fashioned oats containing peanut butter, sliced almonds, and a tablespoon of raw honey.

I like to make a healthy egg sandwich. Toast a whole wheat English muffin. Then take 1 or 2 egg whites and microwave them on a saucer plate covered with a bowl for about a minute. If you want a hard yolk, be sure to poke it so it runs with the whites. Place eggs on the English muffin. I usually spread strawberry jam on my muffin, others like butter. You can also add cheese while the egg is warm so it melts, and salt and pepper to taste.
