French toast
Ingredients
- 2 slices of bread (cinnamon raisin or whole wheat are great)
- 1 egg
- ¼ c. milk
- ½ c. apple sauce (if you can get a fresh apple, ½ a sliced apple is even better!)
- 1 Tbsp. raisins
- 1 Tbsp. walnuts
- Options: ½ tsp. cinnamon, ¼ tsp. nutmeg, 1 tsp. vanilla extract
Directions
Beat the egg well, add the milk and, if desired, the vanilla extract, cinnamon, nutmeg and stir.
Pour the liquid mixture in a shallow bowl so you can dip each side of each piece of bread into it. Place the bread on a pan over medium heat. Use a bit of butter/margarine on the pan if it is not nonstick. Cook on both sides until lightly browned, probably 2 minutes each side.
When the bread is done and the pan is free, turn the heat down to low and add the apple sauce (or thin apple slices), walnuts and raisins. These will heat up in just a couple minutes and be ready to serve as a sauce on top of the French toast.

English muffin pizzas
Ingredients
- 1 whole-wheat English muffin
- 2 Tbsp. of low sodium pasta sauce or tomato paste
- ¼ c. of shredded cheese, ideally mozzarella or parmesan
- ¼ c. of frozen spinach
- Optional: garlic powder, onion powder, dried basil, salt and pepper to taste
Directions
Find your closest convenience store or gas station and rummage for above ingredients. Upon returning home, preheat toaster oven or conventional oven to 350°F.
Place frozen spinach in the microwave for 45 seconds to one minute. Transfer frozen spinach to paper towel and squeeze out excess moisture. Season to taste with spices if available.
Remove desired amount of English muffins from packaging. Carefully slice in half.
Cover each half with 1 Tbsp. of tomato sauce, 1-2 Tbsp frozen spinach, and 2 Tbsp shredded cheese. Place on a foil lined baking sheet or toaster oven tray. Bake until cheese is melted and bubbly. Pat yourself on the back for avoiding the take-out trap.

Creative ramen
Ingredients
- Ramen noodles
- Green onions, chopped
- Canned peas and carrots
- Canned mushrooms
Directions
Cover the ramen with water and boil. Add the seasoning packet, green onions, and canned vegetables. Boil together until the noodles are cooked.
